No one can deny the benefits of eating a healthy diet. Scientific and medical evidence confirm this.
Raw food seems to be a growing trend, which may leave you to wonder if this might just be a fad, the flavour of the moment, to be replaced by yet another.
A totally raw food diet may not be the best solution for everyone. Nor may not be everyone’s cup of tea.
However, we can all benefit from eating more fresh, raw food for improved health that leads to increased vitality, more energy, sharper mental clarity, shining hair, clearer skin and sparkling eyes.
These are just a few fantastic reasons to add fresh, raw ingredients onto your plate of grilled salmon or chicken.
I really don’t need to remind you ~ we all know that ‘real’ food is, without doubt, the way to go as far as our nutrition is concerned. It sure beats fast food hands down.
Yet, when food shopping in the supermarket, you only venture into the fresh produce department only as far as the apple and orange display and cannot tell a romanesco from a rutabaga.
No prizes for guessing what happens next: Microwave dinner wins again!
Perhaps you really tried hard. Dinner for the family last was tofu burgers with Brussels sprouts. No one came to the table. Even the dog wouldn’t eat what the family didn’t eat.

So you decided that all this effort was in vain. You sincerely want you and your family to be so much healthier eating ‘real’ food. But it’s just too difficult. Or is it really so?
Let’s try a few ‘ifs’: What if there was a way you could prepare raw foods that are so delicious that your family would be hovering around you (and the food) in the kitchen even before dinner time ~ and seated, waiting at the dinner table, licking their lips?
I’ve been feeding people for a long, long time, from my restaurant days, to family meals to dinner parties.
Over the years, I’ve been able to develop that innate sense of what even the fussiest of eaters will eat or not eat. I can even get kids to go for tofu burgers and old grandpas to go for quinoa and tossed salad!
So, below, I’ve 3 fantastic raw salad recipes to share with you. These are recipes that are tried and true. They have survived the palates of the pickiest eaters.
These delicious, outrageously good dishes are nutrient-rich and deliver more than just flavour to win over any fussy eater. No one will ever disappear from the dinner table without polishing his plate ~ they are THAT appetizing!
Raw Roots
This recipe offers a really cheap and easy way to get your quota of folates and trace minerals. You really can’t beat beets for nutritional value.
These root veggies have an earthy sweetness that will you (and your family) taking second, even third, helpings. So perhaps…you should prepare larger portions!

Ingredients for The Salad

* 1 fennel bulb
* 4 large beets, peeled
* 1 apple, washed and unpeeled
* 2 bunches scallions (spring onions), cleaned, then thinly sliced

Ingredients for The Dressing
* 1 garlic clove, finely grated
* 1 small ginger root, finely grated
* 1/2 tsp. unrefined sea salt
* 1/4 tsp. freshly ground black pepper
* 2 Tabsp. lemon juice from 1 lemon
* 2 Tabsp. raw apple cider vinegar (Braggs is a good brand)
* 4 Tabsp. cold pressed extra virgin olive oil
* 1 Tabsp. raw, unprocessed honey
* 1 Tabsp. fresh parsley, finely chopped
* 2 Tabsp. fresh mint leaves, finely chopped
Ingredients for The Garnish
* 1/3 cup chia or sunflower seeds
* 1/3 cup crumbled feta cheese
METHOD
1. Slice very thinly the carrots, apple and beets with a paring knife or a mandolin. Stack in layers, then slice into long strips. Put all ingredients in a large salad bowl. Put aside.
2. Clean the fennel bulb. Trim off the stalk and the first outer layer. Slice the remaining bulb into very thin rings. Add to the salad bowl.
3. For the Dressing: Chop the fresh herbs (parsley and mint). Add the finely grated garlic and ginger. Mix together with the dressing ingredients (sea salt, ground pepper, lemon juice, apple cider vinegar, olive oil, honey) in a blender or a small jar.
4. Add the dressing to the prepared vegetables in the salad bowl. Toss well.
5. Sprinkle the salad with the feta cheese and chia seeds/sunflower seeds.

Apple & Poppy Seed Coleslaw
I’ve yet to meet someone, child or adult, who hasn’t fallen in love with this salad. It’s packed full of crunchy goodness and a punchy, tangy dressing. This is a great summer salad for picnics and outdoor meals in the sun.
I haven’t met the child (or adult) who doesn’t love this salad. Packed full of crunch with a tangy dressing, it’s a staple for old-fashioned picnics and summer adventure.
APPLE & POPPY SEED COLESLAW
Ingredients for The Salad
* 1 small cabbage (red or green), finely shredded
* 2 medium carrots, peeled, julienned (thin strips)
* 2 apples, peeled, cored, julienned (thin strips)
* 1/4 cup red onion, diced
* 2 Tabsp. fresh parsley, finely chopped
* 1/2 cup pumpkin seeds, toasted
* 1/2 cup raisins
Ingredients for The Dressing
* 1/4 cup mayonnaise (preferably make your own)
* 1/4 cup plain whole milk yogurt
* 1 1/2 Tbsp. raw apple cider vinegar
* 2 Tbsp. raw unprocessed honey
* 1/2 Tbsp. poppy seeds
* 1/4 tsp. freshly ground black pepper
* 1/2 tsp. unprocessed, raw sea salt
Method
1.Wash the cabbage, dry thoroughly, then shred finely. Place in a large salad bowl. Put aside.
2. Cut the carrots and apples into fine strips (julienne). Dice the red onion. Chop the parsley very finely. Add to the salad bowl.
3. Lightly toast the pumpkin seeds. Add to the salad bowl.
4. Add the raisins to the salad bowl.
5. Whisk together the ingredients for the dressing until you get a homogenous blend.
6. Put the blended dressing in the salad bowl.
7. Toss all the ingredients together and serve.

SuperDouper Power Green Salad
I’ve given a grand make-over to the ubiquitous standard green dinner salad. This salad will compliment any main course at the dinner table.
Leafy greens are a power-packed source of nutrition. Together with the fresh, herby dressing with a kick, you’ve a 5-star healthy, salad to serve to your family or guests.

SUPER DOUPER POWER GREEN SALAD

Ingredients for The Salad
* 1 cup fresh baby spinach, shredded
* 3 1/2 cups red chard, shredded
* 1/4 cup carrot, shredded
* 1/4 cup walnuts, crushed
* 1/4 cup pumpkin seeds, toasted
Ingredients for The Dressing
* 1/2 teasp. fresh minced garlic
* 1/2 teasp. fresh minced ginger
* 1/2 jalapeno pepper, minced
* 4 sprigs fresh mint, minced
* 2 sprigs fresh oregano, minced
* 2 teasp. raw, unprocessed sea salt
* 3 Tabsp. cold pressed walnut oil
* 2 Tabsp. fresh lemon juice from 1 lemon
Method
1. Wash all salad ingredients.
2. Shred the carrot. Put in a large salad bowl.
3. Tear the baby spinach and chard with your hand. Add to the salad bowl.
4. Toast the pumpkin seeds. Add to the salad bowl.
5. Crush the walnuts. Add to the salad bowl.
6. Put all the ingredients for the dressing in a blender or a food processor. Mix well.
7. Add the dressing to the prepared salad ingredients in the salad bowl.
8. Toss well and serve!
